Savory and Satisfying Pesto
On a late summer afternoon I searched our fridge, looking for something at once healthy and satisfying. It was a season of fresh produce, inspiring me to make something new. And tonight, it had to be pasta. But with a twist. Tonight we filled the sauce with the fresh baby spinach from the farmers’ market. And so this savory and satisfying pesto came to life.
- A large bunch of Spinach
- small handful of basil
- half a cup of walnuts or pinenuts
- salt and pepper to taste
- pound of pasta
- 1/2 cup if olive oil
Blend ingredients until smooth and add to cooked pasta.
